Chawanmushi
Ingredients
- 20g dashi powder
- 1 tbsp miso paste
- 1 tbsp soy sauce
- 2 tbsp mirin
- 4 eggs
- Spring onions
- 150g smoked fish
- 600ml water
Cooking Instructions
- Boil water then, add dashi, miso, soy sauce, and mirin.
- Reduce heat, and whisk for 1 minute until smooth then let it cool.
- Get a steamer that fits 4 bowls. Put fish inside the bowls.
- Beat eggs and add dashi/miso water. Strained before pouring into the bowls and in the steamer.
- Cover the bowl and steam the egg mixture for 10 minutes.
- The egg is cooked, looking smooth but jiggly.
- Ready to eat.
