Spinach Salad
Ingredients
- 2 bunches of spinach
- 1 carrot - cut into thin slices along the length and soak in salt water for 1 hour
- Mung bean noodles - soak in boiled water for approximately 5 minutes and stir until supple
- Roasted peanuts - optional: almond/cashew/peanut
- Dressing:
- 2 tbsp light soy sauce
- 2 tbsp black vinegar
- 3 tbsp minced garlic
- 1/2 tsp salt
- 1/2 tsp sugar
- 2 tbsp dried red chili
- 2 tbsp hot oil
Cooking Instructions
- Trim the spinach roots. Thoroughly wash the spinach then cut them into 3 pieces. Put the spinach in boiling water (with 1/2 tsp salt and 1 tbsp oil) for 1 minute. Drain and submerge in cold water. Drain again and gently squeeze any excess water.
- Prepare a large container and add the spinach along with the carrots, noodles, beans, and all the ingredients for the dressing. Mix gently and the spinach salad is ready to be enjoyed.
