Zucchini Noodles
Ingredients
- Zucchini (Japanese cucumber)
- 1 bowl of Edamame
- ¼ red cabbage
- 2 carrots
- Thai basil leaves
- ¼ bowl of peanuts
- ¼ bowl of peanut sauce
- 1 glass of lemon juice
Cooking Instructions
- Spiralize zucchini, grate cabbage, and thinly slice carrots.
- Toss the vegetables together, then add basil and lemon juice.
- Refrigerate for 5 minutes. Add peanut sauce and sprinkle peanuts before consumption. Leftovers can be stored in the refrigerator for 3 days.
- Ready to eat.
