Ayo-Ma Style Beef Rib Soup
Ingredients
- 1 kg beef ribs (choose the meaty one)
- 250 g carrots – round sliced
- 150 g potatoes – diced
- 8 cloves of shallots
- 6 cloves of garlic
- 4 cm ginger
- 5 cardamom pods
- 5 pieces of star anise
- 2 cinnamon sticks
- 4 stalks of spring onion
- 3 stalks celery
- Salt, sugar and pepper
- 2 litre water
- Condiments:
- Lime, tomato slices, fried onions, chilli sauce.
Cooking Instructions
- Bring water to a boil in a saucepan and boil the ribs until frothy (approximately 3 minutes). Discard the water and drain the ribs.
- Grind shallots, garlic and ginger. Sauté until fragrant.
- Put 2 litres of water in a pot or pressure cooker (optional). Add the ribs, sauteed onions, cardamom, star anise, cinnamon, 2 tsp salt, and 1/2 tsp pepper. Cook the ribs until tender. It takes approximately 1 hour using a regular pot and approximately 40 minutes using a pressure cooker.
- Once the meat is tender, add carrots, potatoes, spring onion stalks, and celery (tied). Simmer until the carrots and potatoes are tender. Do a taste test and make the necessary adjustments.
- Ayo-ma style beef rib soup is ready to be served warm, accompanied by tomato slices, lime, a sprinkle of fried onions, and sambal.
