Mama’s Opor Chicken
Ingredients
- 1 chicken
- Chicken marinade seasoning:
- Salt
- 1 lime
- Ground spices:
- 10 cloves shallots
- 5 cloves of garlic
- 5 candlenuts - roasted
- 1/2 tsp cumin - roasted
- 1 tsp coriander - roasted
- 2 turmeric segments - grilled
- 1 tsp pepper
- 1/2 tsp salt
- Additional spices:
- 2 galangal segments - smacked
- 2 lemongrass stalks - smacked
- 4 bay leaves
- 6 lime leaves
- Ingredients:
- 400 ml liquid milk - uht plain
- Water
- 1 tbsp palm sugar
- Oil for sautéing
Cooking Instructions
- Wash the chicken thoroughly and marinate with lime juice and salt for 30 minutes. Rinse quickly.
- Sauté ground spices until fragrant, add additional spices and mix well. Add the chicken and cook until it changes colour. Add a dash of water and stir well.
- Add palm sugar and milk while stirring continuously over low heat. Taste the mixture and adjust the seasoning to your preference. Bring to a boil, then remove from heat.
- Opor chicken is ready to be served, garnished with fried shallots.
