Gotu Kola Leaf Omelette
Ingredients
- 30g gotu kola leaves - washed and sliced to taste
- 5 eggs
- 1 carrot - grated
- 3 garlic cloves - smacked and minced
- 5 shallot cloves - thinly sliced
- 1 spring onion - thinly sliced
- Sugar, salt, and pepper
- 3 tbsp olive oil/coconut oil
Cooking Instructions
- Beat eggs with a little sugar until slightly bubbly.
- Add carrots, shallots, garlic, and spring onions and beat well. Add gotu kola leaves, salt, and pepper to taste and whisk well.
- Heat oil in a pan over low to medium heat, pour the egg mixture into the pan, and cook until both sides are evenly cooked by flipping.
- Ready to serve warm.
