Tauto (Tegal Soup)
Ingredients
- 1.5 L water
- 1/2 chicken
- 2 bay leaves
- 1 segment of lemongrass
- 1 tbsp salt
- 3 cloves of garlic
- 2 cloves of shallot
- pepper to taste
- 1/2 chicken
- Fermented soybean paste chilli:
- 10 pieces of red chili
- 5 pieces of bird’s eye chilli
- 5 of shallot
- 4 tbsp fermented soybean paste
- salt to taste
- sugar to taste
- 3 cloves of garlic
- Frying oil
- Topping:
- Beansprouts
- 200 g rice noodles
- Sweet soy sauce
- Chicken intestine chips
- Scallions/ celery
- Fried onion
Cooking Instructions
- Boil the chicken until fully cooked. Remove from the pot, shred the meat, and set aside.
- Grind the shallots and garlic, then sauté them. Add the sautéed mixture to the chicken broth. Add lemongrass, bay leaves, peppercorns, and salt. Bring to a boil, then remove from heat.
- For the fermented soybean paste chilli (Sambal Tauco): Boil the red chilli and cayenne pepper, then grind and set aside. Sauté the shallots and garlic until fragrant. Add the crushed chillies, fermented soybean paste, salt, and sugar. Stir and cook until thickened.
- In a bowl, combine the noodles and bean sprouts. Pour in the broth, then top with Sambal Tauco, shredded chicken, fried onions, and chicken intestine chips (optional). Drizzle with sweet soy sauce.
- Tauto (Tegal Soup) is ready to be enjoyed with hot rice.
