Typically, Cilembu sweet potatoes are stored for approximately three weeks before processing, a practice that significantly boosts their sugar content.
The nutritional content of Cilembu sweet potatoes is quite similar to sweet potatoes grown elsewhere. However, the amount of carbohydrates in Cilembu sweet potatoes is higher compared to sweet potatoes cultivated in other regions.
Cilembu sweet potato stands as a truly distinctive crop, exclusive to the Indonesian region of West Java, Sumedang Regency, Pamulihan sub-district, and Cilembu Village. As a result, it is protected by Geographical Indications. When the same variety of yam is grown outside this specific area, it cannot be labeled as Cilembu Sweet Potato, and its flavor profile differs.
