Local Salt That’s Worth Trying!

Karangasem Regency is situated between the latitudes of 80°00’00”-80°41’37.8″ South and
longitudes of 115°037’9.8″-115°054’8.9″ East, encompassing the entire region where Amed
Salt is produced. In Amed, salt farmers continue the age-old tradition of salt production,
following in the footsteps of their ancestors.

While salt production in many parts of Indonesia involves drying and crystallizing seawater directly on the ground, Amed’s salt-making process stands apart. Here, seawater is left to evaporate within decades-old coconut trunks, 20-30 years on average, known locally as “palungan,” for a period ranging from 4 to 7 days, resulting in the formation of salt crystals.

Amed salt dates back more than 500 years and was once offered as tribute to the King of Karangasem. It distinguishes itself with its slightly coarse texture compared to ordinary table salt, yet its color remains the same pure white. The absence of a bitter aftertaste has made this salt a favorite among chefs and culinary enthusiasts.

The Ministry of Education, Culture, Research, and Technology (Kemendikbudristek) has recognized Amed salt as one of Bali’s nine cultural heritages, designating it as an Intangible Cultural Heritage (WBTb). This acknowledgment, along with other Balinese food and beverages such as arak bali, serombotan, and jaja laklak, is detailed in the Indonesian Ministry of Education, Culture, Research, and Technology Letter Number 414/P/2022, which outlines the Determination of Indonesian Intangible Cultural Heritage in 2022. In addition, Amed Salt has received registration as a Geographical Indication.

Today, the quality of food products in Indonesia is not inferior to the quality of products from
other countries. A prime example is Bali Amed Salt. Let’s come together to support Amed Salt,
ensuring its sustainability and continued recognition on the global stage.
