Aromatic Ginger Braised Chicken
Ingredients
- 1 chicken - cut into 6 pieces
- 500 ml coconut water - optional (water is fine)
- 2 lemongrass stalks - smacked
- 4 kaffir lime leaves
- 1 tbsp palm sugar - combed
- 3 tbsp oil for sautéing the spices
- Ground spices:
- 6 cloves of garlic
- 8 cloves of shallots
- 4 curly red chillies
- 5 cm aromatic ginger
- 6 roasted candlenuts
- 2 cm ginger
- 2 cm turmeric
- 1 tsp salt
Cooking Instructions
- Heat oil in a pan and sauté the spice paste along with the lemongrass and kaffir lime leaves until fragrant.
- Add the chicken and stir until it changes color. Pour in coconut water or plain water, then add palm sugar, mixing well to combine.
- Taste and adjust seasoning, ensuring the marinade is slightly saltier than usual for braising (you can add 1 teaspoon of salt if needed). Cook over low heat, stirring occasionally, until the liquid has reduced and the chicken is fully cooked and tender.
- This flavorful, spice-infused chicken can be enjoyed as is or finished by frying or grilling until aromatic and beautifully browned.
