Clear Spinach Soup
Ingredients
- 3 bunches of fresh spinach
- 1 red sweet potato, cut into cubes
- 1 sweet corn, shelled
- 1 tomato, sliced
- 1 curly red chili, diagonally sliced
- 3 shallots cloves, sliced
- 2 garlic cloves, minced
Cooking Instructions
- Wash spinach. Separate the leaves from the stems.
- Sauté garlic, shallots, and chili until fragrant. Add water and wait for it to boil.
- Add the sweet potato pieces. When they have softened, add corn and leave for about 3 minutes. Add the spinach stems. A minute after, add the leaves and tomato. Bring it to a boil and remove from heat. Ready to serve.
