Doenjang Bok Choy
Ingredients
- 300 g bok choi
- 2 cloves of garlic, bruised and minced.
- 1 spring onion, chopped
- 1 tbsp doenjang (soybean paste)
- 1 tsp chili paste
- 1 tsp sugar
- sesame seeds
- 1 tbsp sesame oil
Cooking Instructions
- Detach the bok choy leaves, cut off the stems, and cut them into bite-sized pieces.
- Boil the bok choy for 1-2 minutes. If you prefer, it can be steamed for a bit longer.
- Drain the bok choi and rinse with cold water to keep the leaves fresh and green.
- Combine the garlic, spring onion, doenjang, chili paste, sugar, and sesame oil in a bowl. Mix with a wooden/plastic spoon.
- Squeeze the bok choy, add to the bowl of seasoning (no. 4), and mix well by hand.
- Sprinkle with sesame seeds before serving.
