Duet Oncom Genjer
Ingredients
- 1 board of oncom - coarsely chopped
- 1 bunch of young genjer – deleafed and cut into slices
- 1 large red chilli pepper - sliced diagonally
- 2 bay leaves
- 3 cm galangal - smacked
- Brown sugar, salt and pepper to taste
- Oil for sautéing
- Ground spices:
- 6 cloves of shallot
- 4 cloves of garlic
- 3 curly red chilli peppers (opt for bird's eye chillies for a spicier alternative)
- 2 cm aromatic ginger
Cooking Instructions
- Soak the genjer in salt water for 15 minutes. Rinse and drain.
- Heat oil in a pan. Sauté the ground spices, bay leaves, and galangal until fragrant.
- Add the genjer, sliced chillies, salt, brown sugar, and pepper. If needed, add a splash of water. Stir well and adjust the seasoning to taste.
- Add the oncom and stir until evenly mixed. Cover the pan and simmer for a minute until thoroughly cooked.
- Fun Fact: Oncom is rich in probiotics, which are excellent for maintaining digestive health.
