Fried Vermicelli
Ingredients
- 250 g dried vermicelli
- 1.5 bowls of bok choy / mustard greens - shred and cut to taste
- 2 bowls of bean sprouts
- 150 g chicken thigh fillet
- 2 cloves of garlic
- 2 stalks of spring onions - finely sliced
- 2 eggs
- Chilli - customize heat level
- Corn starch
- Soy sauce
- Sesame oil
- Sugar
- Sweet soy sauce
- Water
Cooking Instructions
- Soak the dried vermicelli in water until soft. Drain and pat dry
- Rinse the bean sprouts with cold water. Drain and pat dry
- Slice the chicken and marinate with 1 teaspoon each of cornflour, soy sauce, sesame oil, and sugar.
- Prepare the soy sauce marinade: Mix 2 tablespoons of sweet soy sauce, 1 tablespoon of soy sauce, 1/2 tablespoon of sesame oil, and 1/4 cup of water. Set aside.
- Sauté the onion and marinated chicken until fragrant, then add the beaten egg and vegetables. Add the vermicelli and soy sauce mixture, stirring well until cooked
- Ready to serve
