Ginger Chicken
Ingredients
- 750 g whole chicken thigh
- 5 cloves of garlic, sliced
- 1 thumb-size ginger, grated
- 2 tbsp lime juice
- 2 tsp soy sauce
- 2 tbsp cooking wine (optional)
- 1 tbsp sesame oil
- Salt, pepper
- Toppings:
- 4 stalks of cung/regular spring onion
- 3 cloves of garlic, bruised and minced
- Salt
- Mushroom broth
- 1 tbsp sesame oil
- 3 tbsp oil
Cooking Instructions
- Marinate the chicken in lime juice. After 15 minutes, rinse and cut.
- Combine sliced garlic, salt, soy sauce, cooking wine, sesame oil, pepper, and a part of grated ginger. Coat the chicken with the seasoning and let it marinate overnight in the refrigerator or for 3 hours before cooking.
- Prepare a steamer. Place the chicken in a stainless container and sprinkle the remaining grated ginger on top. Steam for about 1 hour.
- While waiting, prepare the topping. Combine sliced scallions, salt, and mushroom broth. Set aside.
- Heat oil and sauté minced garlic. When it has browned, add spring onion and sesame oil.
- Sprinkle the garlic-scallion topping on top of the chicken. Ready to serve.
