Honey Grilled Chicken
Ingredients
- 1 whole chicken (900 g), cut to taste
- Seasoning:
- 50 ml coconut water
- 50 ml sweet soy sauce
- 2 tbsp soy sauce
- 4 tbsp honey
- 4 cloves of garlic, grated
- 5 cloves of shallots, finely sliced
- 2 finger joints’ length of ginger, grated
- 2 stalks lemongrass, bruised and cut
- 1 tsp coriander powder
- 1 tsp ground pepper
- 1 tbsp coconut sugar
- 2 tsp salt
- 1 tbsp lime/lemon juice
- Chili sauce and fresh vegetables
Cooking Instructions
- Wash the chicken thoroughly. Drain to dry.
- Combine all seasoning ingredients in a container and mix well.
- Place the chicken pieces into the marinade, mix well, and let it rest for 30 minutes (you can store it in the refrigerator).
- In a saucepan, add the chicken mixture with the spices, cooking on low heat until the liquid is reduced. Turn off the heat and leave for 2 hours to absorb the marinade (you can store it in the refrigerator and grill when needed).
- Grill the chicken on a pan or over charcoal fire, basting with the remaining marinade.
- Turn the chicken over until it is evenly cooked and dry.
- Serve with sambal and fresh vegetables.
- Tip: For better flavour absorption, allow the chicken to rest overnight in the refrigerator before grilling.
