Mung Bean Porridge
Ingredients
- 5 tbsp mung beans
- 1 sweet potato
- 1 block palm sugar
- 65ml coconut milk
- Salt
- 2 pandan leaves
- 2 tbsp ginger
- 5 bowls water
Cooking Instructions
- Soak mung beans for 4 hours.
- Boil mung beans, sweet potato, pandan leaves, and ginger for 20 minutes.
- Once soft, add palm sugar and salt.
- Add coconut milk. Stir and turn off the heat.
- Ready to eat.
