Pickled Bean Sprouts
Ingredients
- 2 cucumbers
- ½ kg bean sprouts (optional: Japanese bean sprouts)
- 1 tsp vinegar
- Salt and sugar to taste
- Spices:
- 4 shallots
- 2 garlic
- 2 red chili (heat according to preference)
- 1 segment (4 cm) galangal, bruised
Cooking Instructions
- Wash the cucumber and bean sprouts thoroughly. Thinly sliced, the cucumber.
- Puree red onion, garlic, and red chili. Saute until fragrant, then add galangal and give it a stir. Put the cucumber and bean sprouts, then add vinegar, salt, and sugar. Taste and adjust the flavor.
- This dish can provide freshness amidst of hot weather.
