Pickled Wood Ear Mushroom
Ingredients
- 100 g wood ear mushrooms (dry/wet)
- 3 cloves of shallots
- 3 tbsp apple cider vinegar 2 tsp soy sauce 1 tsp sesame oil Chilli – sliced, customize heat level
- 2 tsp soy sauce
- 1 tsp sesame oil
- Chilli – sliced, customize heat level
- Thai lemon basil leaves
Cooking Instructions
- Soak the mushrooms in cold water for 2 hours, until they expand and become translucent brown. If using hot water, it only takes 20 minutes.
- Boil the mushrooms for 5 minutes, then drain and pat them dry.
- Sauce: Sauté the onion with all the spices, then add the vinegar.
- Mix the sauce with the wood ear mushrooms, Thai lemon basil leaves, then refrigerate for a while. Ready to serve.
- Tips: Always cook or process mushrooms before consuming to avoid the risk of poisoning
