Prawn Salad
Ingredients
- 250g unripe papaya, shaved
- 1 carrot, shaved
- 150g chickpeas/long beans
- 50g cherry tomatoes
- Coriander leaves, basil leaves, mint leaves
- Sauce:
- 3 tbsp roasted ebi
- 2 garlic cloves
- cayenne/red chili -optional
- 4 tbsp palm sugar
- 2 tbsp tamarind juice
- 2 tbsp fish sauce
- 4 tbsp lemon juice
- 3 tbsp roasted peanuts
- 4 large tiger prawns, cleaned
- Marinade:
- 2 tbsp lemon juice
- 1/4 tsp pepper
- 1 tsp coriander powder
Cooking Instructions
- Soak shrimp in marinade for 15 minutes.
- Make the sauce. Blend ebi, garlic, peanut, chili, and palm sugar. Once smooth, add the remaining sauce ingredients and mix until combined.
- Add the salad ingredients and mix well.
- Saute the shrimp until cooked and put them on top of the salad. Sprinkle mint, basil, coriander, and roasted peanuts as toppings.
- Enjoy.
