Pumpkin Lodeh
Ingredients
- 2 tbsp oil
- 170g tofu
- ½ bowl of coconut milk
- ½ bowl of water
- ¼ pumpkin
- Cabbage
- Chickpeas
- 2 Chilies
- Tofu skin
- Salt
- 1 Shallot
- 2 garlics
- 1 lemongrass
- 1 tbsp ginger
- ¼ bowl of dried shrimp
- 1 tsp of each: coriander powder and cumin powder
- ½ tsp turmeric powder
- 1 tsp chili powder
- ¼ bowl of water
Cooking Instructions
- Combine lodeh seasoning ingredients.
- Fry tofu until yellow.
- In a wok, sauté lodeh spices for 5 minutes. Add coconut milk and water. Bring to a boil.
- Add pumpkin, cabbage, and tofu.
- Reduce heat and simmer for 5-10 minutes.
- Add chickpeas and tofu skin. Boil for 5 minutes.
- Ready to eat.
