Rendang Yellow Rice
Ingredients
- Yellow rice ingredients:
- 2 bowls of rice
- 10 curry leaves
- 2 tsp turmeric
- 2 tsp mustard seeds
- 2 tbsp oil
- 2 tsp chicken stock
- 2 lemongrass stalks - bruised
- Rendang ingredients:
- 1kg beef – cut into small pieces
- 2 tbsp oil
- 400ml coconut milk
- 2 tbsp shaved coconut
- 3 kafir lime leaf
- 1 tbsp chicken broth
- 1 tbsp tamarind
- 1 tsp honey/sugar
- 4 tsp salt
Cooking Instructions
- Wash and soak the rice for 15 minutes.
- In a pan, heat mustard seeds, turmeric, curry leaves, rice, lemongrass, chicken broth, and 3 bowls of water. Transfer the mixture to a rice cooker and cook.
- Soak the chillies in hot water for 15 minutes. Drain, deseed, and blend the chilies with other rendang spices.
- Sauté the blended spices in oil until fragrant, then add the meat, and lemongrass. Once cooked, add coconut milk and water. Simmer over low heat, stirring continuously until it reaches a boils.
- After 1 hour add shaved coconut, tamarind, sugar, salt, and chicken broth powder. Reduce the heat and simmer for another 30 minutes, stirring constantly until the sauce thickens and reduced.
- Plate the yellow rice and rendang meat.
- Enjoy.
