Salted Egg Shrimp
Ingredients
- 250 g shrimp
- seasoning flour:
- 3 tbsp flour
- 1 tbsp cornstarch
- 1/2 tsp garlic powder
- Salt and pepper
- 3 tbsp water
- sauce:
- 4 salted-egg-yolks
- 1 tbsp butter
- 1 tbsp cooking oil (optional: olive oil)
- 3 garlic cloves, bruised and minced
- 1/2 tsp mushroom stock
- salt and pepper
- 2 stalks of spring onion, sliced
Cooking Instructions
- Make a flour coating by combining all the ingredients for the seasoning flour. Coat the shrimp with this mixture and fry them. When cooked, remove from heat and set aside.
- The salted egg sauce: mash the salted egg yolks, add water, and stir until the consistency resembles a paste. Heat oil and butter, then sauté garlic until fragrant. Add the egg yolk paste and sauté until it bubbles. Add salt, pepper, mushroom stock, a dash of water, and mix well.
- Top with sliced spring onion and shrimp, mix well. Taste the dish and adjust the seasonings if needed.
- Ready to serve.
