Sautéed Turmeric Leaves
Ingredients
- 10 turmeric leaves
- 1-2 tbsp Medan anchovies
- Sliced spices:
- 5 garlic cloves
- 8 shallots cloves
- 6 curly chillies/ bird’s eye chillies (personalise spiciness level)
- 1 tsp mushroom broth
- Salt and pepper to taste
Cooking Instructions
- Wash the turmeric leaves, remove the central remove the central bone, and then roll and slice them into thin strips.
- Wash the Medan anchovies, soak them in warm water for approximately 15 minutes. Rinse and drain.
- Prepare the sliced spices: slice garlic, shallots, and chillies thinly.
- Sauté garlic until fragrant then add anchovies, shallots, and chillies. Sauté until spices are fragrant. Add turmeric leaves, salt, pepper, and mushroom broth; mix well and check the taste.
- Cook until the turmeric leaves are fully cooked.
