Steamed Lentils
Ingredients
- 200g lentils (opt for color lentils mix)
- 1 corn, shelled
- 2 tomatoes, cut into small pieces
- 1 spring onion, finely sliced
- 4 cloves of shallot, sliced
- 2 cloves of garlic, bruised and minced
- 3 red chilies, finely sliced
- 3 green chilies, finely sliced
- Salt
- Pepper
- Olive oil
Cooking Instructions
- Wash lentils and soak them for approximately 1 hour. Drain.
- Mix lentils and corn. Add garlic, onion, tomato, chili, spring onion, and a splash of water.
- Steam for 20 minutes and remove from heat. Add salt, pepper, and 1 tbsp of olive oil- optional. Mix well.
- Ready to serve.
