Vegan Beans
Ingredients
- 1 can of beans (Butter beans)
- Mushrooms
- Tomatoes
- Pumpkin seeds
- Kale leaves
- 2 garlic
- 1 tbsp lemon juice
- 1 tsp mustard
- Bread
- Olive oil
- Thyme powder
Cooking Instructions
- Saute pumpkin seeds for 2-3 minutes. (Be careful of the popping seeds. It is a sign that they are cooked).
- Sauté mushrooms in a pan for 3 minutes.
- Add kale, tomatoes, beans/beans, garlic, and thyme.
- After 2 minutes, add lemon juice and mustard.
- Toast bread. Add the sauteed vegetables and pumpkin seeds.
- Ready to eat.
