Woku Fish
Ingredients
- 1 grouper
- 250g chili
- a piece of ginger
- 7 shallot cloves
- Lemongrass, finely chopped
- Lime leaves, bone removed
- Spring onion, finely sliced
- Basil leaves
- 1 red tomato, finely sliced
- 4 green tomatoes, finely sliced
- Salt
- Sugar
- Orange
- Water
Cooking Instructions
- Wash and marinate the fish with citrus and salt, then steam for 8-10 minutes (steaming time depends on the size of the fish).
- Grind chili, shallots, and ginger. Stir-fry with finely chopped lemongrass and lime leaves until fragrant.
- Add a few pieces of red tomatoes. Add a splash of water, salt, lime, and sugar/flavoring (optional). Stir, then add spring onions, basil, red tomatoes, and green tomatoes.
- Pour the stir-fry seasoning over the fish. Ready to serve.
- TIP: to eliminate the fishiness, lime and salt are usually used to coat the fish. However, the fishy smell sometimes lingers. In such cases, coating the fish with calamansi can effectively eliminate the fishy smell. Adding a small amount of calamansi to the dish can also impart a pleasantly tangy taste. Best of luck!
