Yellow Broth Mackarel
Ingredients
- 500g mackerel
- 6 shallot cloves
- 4 garlic cloves
- 1 tomato, sliced
- 2 segments of turmeric
- 2 curly red chilli
- 7 bird's eye chilli
- 1 segment of ginger
- 2 segments of galangal, bruised
- 2 bay leaf
- 2 lime leaf
- 2 lemongrass, smacked
- 1 bunch of basil leaves
- Lime
- Oil
- Sugar
- Salt
- Mushroom broth
Cooking Instructions
- Cut the mackerel into 2 pieces to your preference. Coat with salt and lime.
- Ground spices: shallots, garlic, curly red chilli, ginger, and turmeric.
- Saute the spices with a dash of oil until fragrant then, add galangal, lemongrass, bay leaves, and lime leaves. Wait until fragrant and add water. Stir.
- Add the mackerel to the mix. Add salt, mushroom stock (optional), and sugar.
- Bring to a boil then, add whole chili peppers and tomatoes. Cover momentarily before taste testing and adding the basil. Ready to serve.
