Yellow Dory
Ingredients
- 1 kg dory fish fillet
- 5 cloves of garlic
- 8 cloves of shallots
- 3 cm of ginger
- 3 stalks of turmeric
- Lime juice
- Salt, sugar, pepper
- Cherry tomatoes
- 2 pandan leaves, knotted
- 3 lime leaves
- 2 spring onions, diagonally sliced
- 2 tbsp olive/vegetable oil for sautéing
Cooking Instructions
- Cut the dory fish into medium-sized pieces. Marinate with lime juice and salt for 30 minutes, then rinse and set aside.
- Blend garlic, shallots, ginger, and turmeric. Sauté with olive oil until fragrant, then add pandan leaves, lime leaves, and spring onions. Pour in enough water and bring to a boil.
- Add the dory fish, salt, sugar, and pepper. Stir well, taste, and adjust seasoning. Once boiling, add cherry tomatoes, let simmer briefly, then turn off the heat.
- The yellow dory is ready to be enjoyed by the whole family. Its vibrant color appeals to children, making it a great complementary dish. For adults, enhance the flavor by adding whole chili peppers and a squeeze of lime to the fresh yellow dori sauce.
