Grilled Rica Fish
Ingredients
- Giant trevally or snapper
- 10 cloves of shallots
- 7 curly chili
- 5 bird’s eye chili (use according to preference)
- 4 cm ginger
- Calamansi
- Cooking oil
- Salt and sugar to taste
Cooking Instructions
- Marinate the fish in calamansi juice and salt for 15 minutes.
- Grill the fish until golden yellow and set aside.
- Grind ginger until it becomes a paste.
- Coarsely grind chili and shallots.
- Heat oil and add the seasonings, salt, sugar, and a splash of calamansi juice.
- Pour the stir-fry spice paste over the grilled fish.
- Ready to serve.
